A warm smoothie might sound different, but I promise, it’ll become your new Fall go-to once you take a sip! Most drinks we reach for in the cooler months are full of added sugars and unhealthy ingredients so I wanted to make sure to include an indulgent but still balanced way to cozy up as the weather gets colder.

Benefits:

  • Vegan
  • High in fiber
  • Free from added sugar
  • Protein-packed
  • Blood sugar-balancing
  • And delicious!

Pumpkins are low in calories but high in vitamins and minerals which makes it a very nutrient-dense food. Full of fiber plus vitamins A, C, B2, E and minerals like iron, manganese, copper it’s really an unsung hero of the Fall harvest! Vitamins like A and C can help boost your immune system and antioxidants to help protect cells from free radicals and chronic disease. Plus, it’s incredibly versatile. Just make sure, when buying pumpkin puree, that it’s 100% pumpkin without any added ingredients (especially sugars).

Ingredients:

  • ½ cup water
  • ¼ cup rolled oats
  • ½ cup pumpkin puree
  • ¼ tsp pumpkin pie spice
  • 1 tbsp almond butter
  • 1 tbsp chia seeds
  • ⅓ cup unsweetened almond milk
  • ½ banana
  • 1 tsp maple syrup (optional)

Directions:

  1. In a saucepan over medium-low heat, bring water and oats to a simmer and cook for about 5 minutes. Add the pumpkin and pumpkin pie spice and stir.
  2. Carefully (it’s hot!) add the pumpkin and oats to a high-speed blender with the remaining ingredients. Blend carefully, allowing for heat to escape, until smooth and creamy.
  3. Serve warm and enjoy!
